Disposal is a line item.
Waste costs more than the food. Most kitchens have never seen the total.
The obvious cost of throwing food away is the ingredients. The less visible costs are the labour that prepped it, the energy that cooked it, and the fee that removes it.
None of those appear as waste in a P&L. They are distributed across food cost, wages and utilities, which is exactly why the number is invisible and therefore tolerated.
A cost nobody measures is a cost nobody manages. That is not carelessness; it is accounting.
One of the quieter effects of listing surplus is that it makes the total legible for the first time. Partners see what the last hour was worth, and several have changed their prep because of it.
